Fresh Egg Pasta-today's kitchen… Anna

A simple dough that will allow you to prepare the fresh pasta in less than no time. I thank my mother Anna for the recipe and for the pasta in photos. Few steps, few ingredients and guaranteed result!!! Dress it up as you like but if you're a traditionalist, do as my wife, fresh pasta and fresh gravy for a plate to lick her mustache!!!

Ingredients for 4 people:

500 grams of flour
1 tablespoon of extra virgin olive oil
3 eggs
A pinch of salt
Water if necessary

Procedure:
 
On a plane we put the flour in the mountain, Scaviamola in the center and fill the hole made with oil, salt and eggs. With the help of a fork we lightly whisk the eggs so that they break and can be kneaded with the flour. We work the ingredients until we get a smooth and homogeneous dough. If we have difficulty in mixing the ingredients well and the dough should be difficult to knead because dry, add, little at a time, a little ' water until we can work it with peace. As soon as we have reached the correct consistency, we wrap the dough in the film and let it rest half an hour at room temperature. After the half hour, we lay down, with the help of a rolling pin (or a machine for the fresh pasta), our dough. We have to reach a thickness of about two millimeters and then we can proceed with the cut. Reached the required thickness, we can cut the dough to give shape to our pasta. In the photo were made of noodles but you can choose the format that suits you best. We sprinkle the mixture of flour and tagliamolo in strips about 15 cm wide. Rolled both flaps towards the center to Mo of binoculars. Cut the dough so prepared in slices about 7 cm wide and continue so until we run out of our "binoculars". Ready Pasta.
 
Tips:

As soon as we have cut our noodles, scuotiamole to let them unfurl and act on a tray trying to form a nest and sprinkling of flour to prevent them from sticking together. As soon as we go to cooking, add to the boiling water, a teaspoon of oil, will help us not to attack the dough. It will be enough 1 ' and 1/2 to be ready and however as soon as they start to rise.
