Ingredients for 4 people:

500 gr of fresh noodles
2 kg of beans
1 slice of speck from 100 gr
500 ml vegetable broth or 1 heart of vegetable broth
3 tablespoons of Parmigiano Reggiano
Salt, pepper, E.V.O. oil and oregano to taste

First you have to peel the beans. It's something that will take away some time, so better start a little earlier so you have them ready right now. First, remove them from their pod by practicing an incision with a knife, and then peel the individual fava beans to remove even the thin skin present. Cleaning 2 kg of beans we should get about 450 gr usable. Prepare half a litre of vegetable broth, or if you do not have time for a matter of practicality brought to the boil half a litre of water with a heart of broth star to vegetables, at the beginning I distrusted from the ready products, but I must say that these hearts of broth are really Good and do not contain "strange" ingredients. Pour the raw beans and broth into a blender, whisk until it is reduced to a bright green liquid. Pour everything into a pot and let go over medium heat until the liquid thickens in a cream, stirring from time to time. After cooking, add the Parmesan and season with salt. Apart in a pan with a drizzle of oil cook the speck, after having cut it into thin strips. Half we will put it aside for decoration. Bring to a boil a large pot full of salted water and cook the noodles for a couple of minutes. At the end, drain the pasta and sauté in the pan together with the speck and half of the bean cream, if necessary, adjust the cream with the cooking water.
Tips for mise en place:

Pour a ladle of cream on the bottom of the plate and beat it to distribute it evenly. With a ladle and a fork create a nest of pasta and lay it on the plate. Finish with some strisciolina of speck, a grated fresh pepper, a sprinkling of oregano and a drizzle of raw oil.
