Potato salad, green beans and onions-today's kitchen… Mariella

And we continue with the typical Sicilian recipes. This time sent to me by Mariella. It is a classic Trinacria salad that marries ingredients usually used as a side dish. Easy to carry out can be used as an appetizer or as accompaniment of meat dishes. Let's see how to proceed.

Ingredients for 4 people:

500 grams of green beans
1 red onion
3 tomatoes
800 grams of potatoes
Oregano salt and pepper to taste
Olive oil or wine vinegar to taste

Procedure:
 
Put in a pot full of salted water, potatoes and green beans. Move it to the fire with a lid and let it boil. Meanwhile, we slice the onion and cut the tomatoes into pieces and put them aside. As soon as the potatoes and green beans are ready, we turn off the flame and Scoliamoli then let it cool down. As soon as they are cold, we shave the potatoes and tagliamole in chunks. Put all the ingredients in a salad bowl and season with salt, pepper, oregano, oil and vinegar. Let's amalgamate all the ingredients and get ready to serve.
 
Tips:

Remember to let the potatoes and green beans cool down otherwise the salad will be ruined by the heat that "cooks" the other ingredients. If we prefer, we can prepare individual portions to serve as accompaniment to the main course instead of presenting the salad bowl to be placed in the center of the table.
