Artichokes in oil

A basic preparation is the one, for example, of oil artichokes. Usable as an appetizer or ingredient for the preparation of another course, they are always a guaranteed success. Try to make them together and Gustiamoceli as soon as possible, they will end up in a heartbeat!


1 Kg of artichokes
500 ml of water
500 ml vinegar
1 lemon
2 cloves of garlic
1 chilli
E.V.O. Oil Taste
Oregano, salt, marjoram and dry thyme to taste

We clean the artichokes freeing from the outer leaves until they reach the hearts, cut the bottom and clean the upper part. Let's soak them in water, salt and lemon, to prevent anneriscano, and leave them there for at least 1 H. After the rest time, put the water and vinegar in a large pot and stick it on the fire bringing to a boil. Then we drain the hearts of artichoke and tuffiamoli in the pot leaving them to cook for about 15 '. Scoliamoli and put them to dry, with the part cut downwards, on a dish towel for 5-6 H and anyway until they are perfectly dry even inside. In the meantime cut the garlic into thin slices and rondelline the chilli pepper. As soon as the artichoke hearts are well dry, we can begin to prepare our preserve. We take sterilized jars and start to insert the artichoke hearts that, if they are a bit ' large, we can safely cut in half. Made the first layer, we give with a few slices of garlic, a couple of washers of chili, the dried spices and then start again with the artichokes. We fill so all the jars so we cover the whole with oil E.V.O. Making sure that no artichokes are discovered. We seal the jars tightly and let our preservatives rest for at least 15 days before consuming it.

The jars can be sterilized either by boiling them in a saucepan or washing in a dishwasher. Once opened, the jars will be stored in the fridge and, if necessary, rabboccati with more oil. Once the artichokes are finished, the preserved oil can be used for flavoring or cooking, it is very tasty and aromatic.
