Rigatoni squid and prawns on pumpkin cream

I've been wanting to prepare a pumpkin dish for a while, but I haven't had a chance. Going to do some shopping from the greengrocers, I saw it and, having "need" to satisfy this desire, I bought it. Soon after came the indecision on how to exploit it… After a live conference with my counselor Propositioner of Ideas of trust (read my wife), I am offered the combination pumpkin-squid. I agree with good grade but I add some other ingredient and the result is the dish in photos. Let's see the recipe step by step.


Ingredients for 4 people:

 

450 grams of Rigatoni
1 whole Squid
10 Prawns
150 grams of pumpkin
1 small potato
1 bunch of fresh parsley
1 tablespoon of natural pistachios
1/2 Glass of wine
1 teaspoon of sweet paprika
1/2 teaspoon of cumin
Salt, pepper and E.V.O. oil Q. b

Procedure:

 
We start by preparing the base of the dish or the cream of pumpkin. We clean the pumpkin and tagliamola to pieces, we do the same with the potato and put everything in a pot full of water with a little salt and cumin. We bring over the fire and let it simmer for about 15 '. Meanwhile dedicate to the preparation of the fish. We take the squid that we have previously made clean to our fishmonger of confidence and tagliamone the head to washers and the tentacles in pieces so let's put it aside. We take the prawns, we leave one whole for diner and we clean the others. Remove the heads and put them aside, then Liberiamoli from the carapace and gut and put the whole of the side.

 

The vegetables will be ready now. Scoliamole and trasferiamole into a container. Add some oil and, with the help of an immersion blender, emulsify until we get a smooth and velvety cream. At this point let's put it aside and get ready to cook the fish. Let's fry a clove of garlic skinned and crushed with a drizzle of oil.

 

Meanwhile we bake the pasta in abundant salted water. As soon as it has taken color, togliamolo and add the heads of the prawns that we had set aside. Schiacciamole and let the moods escape so that it begins to form a creamy at the base of the sauté. At this point we add the squid and let it brown a minute then add the prawns and smudge with wine.

 

 

We grind the parsley and's half to the fish. Add the paprika and a bit of ground pepper at the moment and let it cook a couple of minutes more. We remove the heads that we had put at the beginning of the preparation, we drain the pasta and dump in the sauté. Let's go for a couple of minutes and get ready to serve.

Tips for mise en place:

 

We start by putting a few tablespoons of cream at the base of the dish trying to give it a circular shape. Let's put on a couple of ladles of pasta, then complete the dish with a whole prawn, a little chopped parsley and some chopped pistachios at the moment. Add a sprig of whole parsley to the center of the dish and serve.
