Orange salad

Today we speak of a typical Sicilian dish, the salad of oranges. Colorful and tasty is a dish of the popular tradition of Palermo. This is a typical winter salad to accompany meat dishes but also to eat alone, as my wife says, with a whole loaf of bread. Small variations or additions can enrich this dish. You can add olives strictly black or replace the shallot with the red onion but I recommend, however, not to enrich it too much is still a dish poor and risk to distort the balance… let's see how to prepare.

1 fennel
2 oranges
2 shallots
6 Salted anchovies
Salt, pepper and E.V.O. oil Taste

To peparare our salad of oranges, we have to start by cutting the shallots, then we slice the fennel and peel the oranges taking care to obtain clean segments, without skin.


Add the anchovies in pieces then we give with oil, abundant pepper and a pinch of salt. Stir to mix all the ingredients and we are ready to serve.

If served as a single dish, we try to arrange the base of fennels topped with orange wedges with anchovies and shallots to complete.
