Confit cherry tomatoes

Today we will prepare some slightly caramelized tomatoes that require zero fatigue but a little ' patience in cooking. They are tasty and ductile tomatoes that can be used as an appetizer, as a condiment for a first or as a side dish of a second. But let's see the process together.

Ingredients for 4 people:

500 grams of cherry
2 cloves of garlic
Salt and pepper to taste
1 tablespoon brown sugar
A few sprigs of fresh thyme
Dry oregano and extra virgin olive oil to taste

Let's light the oven and preheat it to 140 °. We wash and cut the tomato in two and we cook it on a baking sheet, lined with parchment paper, with the part cut upwards. Let's go with salt, pepper, thyme, oregano, crushed garlic, brown sugar and complete with a drizzle of oil. Inforniamoli and let them cook for about 2 H. As mentioned in the premise, it is a ductile product, it can be used indistinctly as an appetizer, for a first or for a second. If you have to keep them, put them in the fridge well covered and still do not keep them too long preserved.
You can use any type of tomato, not necessarily the cherry, is fine even the classic tomato cluster or whatever you prefer.
