You’ll see that you will surely leave everyone open-mouthed!!!! Let’s see how to proceed.
Ingredients for 4 people
4 teaspoons of dried cherry tomato Pesto
125 grams of buffalo mozzarella
1 tablespoon of pistachios
4 fresh basil leaves
Salt, pepper and E.V.O. oil Taste
To prepare the glasses of caprese, we can use the tomato Pesto dry cherry (if we did and preserved) or, alternatively, put in the mixer a dozen of dried tomatoes, a tuft of parsley, oil, a teaspoon of capers, a walnut and a Bit of chili and mix until we get a grainy but creamy compound.
Let’s proceed, now, with the mozzarella mousse. We put the buffalo, a pinch of salt and a spoonful of oil in the blender glass so we start to chop it until it becomes creamy. If necessary add some more oil. If the mixture is lumpy, we sieve it in a strainer before using it. Let’s get ready to compose the shorts.
Tips for mise en place
Fill the bottom of the liquor cups with a teaspoon of dried cherry tomato Pesto, Compattiaolo Well, then put the mozzarella mousse in a sac a few and finish filling the shorts. We coarsely chop pistachios and spargiamoli on the surface of Capri. We finish with a leaves of basil. We serve on a slate tray.
