Sea bream Puff

 

Today I want to offer you a dish that you can decide to present as a small appetizer or as a second full-bodied. Very simple to realize but rich in taste. Special combinations and “unusual”, make this dish a pleasant novelty, pleasant to the palate and rich in textures. A must try even for a family meal. Let’s see what we need and step by step steps.

Ingredients for 4 people

5-6 Fillets of sea bream

1 Abbot Pear

1 potato

100 grams of cheese

Powdered Ginger to taste

5 basil leaves

1 tablespoon of almonds

Salt, pepper and E.V.O. oil Taste

Procedure

To prepare the golden puff, cut the cheese in slices and put it aside. Cut the pear into cubes after having thoroughly washed and deprived of the core and we put this aside too. Cut the potato into slices with all the skin, put it in a bowl add a drizzle of oil and we mix with a pinch of salt then stir well so as to grease all the slices.

We put a pan on the fire with medium flame, add a drizzle of oil then add the cubes of pear. We give salt, pepper and ginger and let them jump for two minutes so let’s put them aside.

In the same frying pan we bake the slices of potato by turning them until they are crispy on both sides. Meanwhile, we climb and pepper the fillets of sea bream and brush them with oil and cook them, in another pan, on medium heat and on the side of the skin. At this point we can put aside the slices of potato and finish the cooking of the fish. Let’s get ready for serve.

Tips for mise en place

With the help of a coppapasta, we get some discs from the fillets of sea bream then we place the Coppapsta in the center of the plate, we start to compose the plate with the first disc of fish, ricopriamone the whole surface with the diced of pear, let’s act on the slices of Cheese (which will melt with heat), then cover with the slices of potato and another disc of sea bream. We complete the dish with the basil cut into thin strips and the coarsely chopped almonds. A drizzle of oil before serving.
