Today she cooks with us, our friend Giovanna, food blogger and curator of the blog Appuntimperfetti. He sent us the recipe of the lasagna with salmon and zucchini that he prepared specially for us. Let's see how we proceed to replicate them.
Fresh lasagna, a pack of 250 gr
Smoked salmon, 300 gr
Extra virgin olive oil
Salt and pepper
grated parmesan, 2 Cc
breadcrumbs, 2 Cc
Milk, 500 ml ambient temperature
Butter, 50 gr
Farina, 50 gr
Finely cut the onion and let it brown with a drizzle of extra virgin olive oil. Grattugio finely the zucchini and add it to the onion together with the oil and two tablespoons of water and let it stew until it becomes soft.
I prepare the béchamel.
I melt, on low heat, the butter in a saucepan. Just melted, towards gradually the flour previously sieved and stir continuously with a whip. Toward the milk flush by continuing to stir. I fix salt, pepper and nutmeg, if you like and leave to cook until you reach the desired consistency.
Cut into strips the smoked salmon and as soon as the zucchini are cooked I add it and let it brown a minute.
Add the Béchamel, mix, set of salt and leave to gain flavor for a couple of minutes.
Butter a baking dish, have a layer of lasagna and one of zucchini cream with salmon.
Continuous alternating a layer of lasagna and one of cream.
On the last layer spread the grated parmesan, the breadcrumbs and some curls of butter.
In oven heated to 200 ° for about 15 minutes and until the crust is formed.
