Crust cream of salmon avocado and quail eggs

We continue with the series of tasty and elegant appetizers useful for the dinners of the next festivity. Fresh ideas, practical, fast and, above all, tasty. Today we will join together unusual ingredients but that I assure you they marry very well and leave a pleasant taste in the mouth. Different textures and flavor in contrast, make this appetizer a pleasant entrée to start a rich and party meal. Let's see how to proceed.

500 grams of bread
4 quail eggs
1 avocado
1/2 Lemon
150 grams of smoked salmon fillet
1 bunch of chives
Salt, pepper and E.V.O. oil Taste

We prepare our crust of bread with avocado cream, salmon and quail eggs, starting with chopping the avocado. Trasferiamolo in a bowl, add salt, pepper and the juice of half a lemon then, with the help of a fork, we crush the fruit until you get a puree. After this operation, we can put the cream aside. We suffer the fillet of salmon so that we get thin slices so let's put this aside too.


Cut the bread in half, priviamolo of the final parts then cut, the slices thus obtained, for the length so as to have four identical roughly crostoni. We sprinkle the surface of the bread with a drizzle of oil then we put to toast on a frying pan previously heated. As soon as it is well colored we can put it aside. Let's prepare the quail eggs now. We put a small coppapasta in the middle of the pan and let us slide inside the egg that will cook only a few seconds. Let's remove the Coppapasta and set aside the ready eggs. We can assemble our crust.

On a slate plate we lay the crispy crust, spalmiamoci over two tablespoons of avocado cream, cover the whole surface with the salmon slices and complete with the egg lying on the wider side of the crust. We finish with a minced pepper and chives previously chopped.
