Cut the sage and the garlic and cook the tomatoes cut in half with a pinch of salt. Let them wither over medium heat and, in the meantime, we cook, in abundant salted water, the dough for the time indicated in the package. As soon as the tomatoes are ready, trasferiamoli in the glass of the blender, taking care to keep someone aside for the final decoration, and mix until you get a thick and velvety cream. Filtriamola with a fine knitted strainer in order to eliminate skin residues and put aside.
We drain the pasta al dente and Mentechiamola with the ricotta. Prepare to compose the dish.
On a bottom plate, pour as many tablespoons of velvet as you need to cover the bottom. With a kitchen pliers and a ladle, rolled a portion of the pasta and mix it in the center of the dish. We complete with some tomatoes on the top of the pasta, a basil leaf and a sprinkling of paprika.
