Linguine clams and green beans pesto

An experiment that I have granted, was to upset the Tradizionalissima pasta with clams, adding to this dish, a green bean pesto together with chunks of the same. Surely, who loves this first, storcerà nose but I feel to reassure him since, there is no better result of an experiment done in the presence of guests who have certainly not complained, to see their dishes, I must say that they certainly liked the thing… There is no better confirmation, I assure you why do not you also try? This is what you need to prepare this range:

400 grams of linguini rough
1 Kg of real clams
500 grams of fresh green beans
1 medium Potato
1/2 Glass of white wine
1 handful of basil
1 chilli
1 clove of garlic
Salt, pepper and E.V.O. oil Taste

To prepare our linguini with clams and green beans pesto, we must start by putting the clams to purge for at least 30 ' in the water and salt. Meanwhile, remove the tips of green beans, laviamoli then we cook steam, together with the potato cut in washers, for about 20 '. After the cooking time, we should have the well-cooked potato and the green beans still crispy.



Take one third of the green beans and cut to chunks long about 2 cm so let's put them aside. Put on the fire a sauté with a tablespoon of oil, the clove of garlic and 1/2 chilli and let brown to sweet flame. Just ready, we remove the garlic and we cook the clams that we will have to rinse previously with abundant water. We raise the flame and smudge with wine. So we cover with a lid and let all the clams open.

After the cooking of the clams, put the pasta in the water used for the steaming of the beans previously salted and let it cook for half the cooking time indicated in the package. Pour the potato and green beans in the jug of the mixer, add a pinch of salt, pepper, the remaining chilli pepper, 2 tablespoons of oil, basil and the cooking water of clams that will be ready now. Mix until we have a smooth, velvety and homogeneous mixture. Add the cooking water a little at a time to avoid excess and to find us with a pesto too liquid. We drain the pasta and terminiamone the cooking in the water of clams. As we finish cooking the pasta, we shell the clams taking care to keep some of them aside for the final decoration.

As soon as the pasta is cooked, we turn off the flame, add the pesto, the shelled clams and the chunkss of green beans and let's do everything for a couple of minutes so prepare to serve.
