Pasta with Curly

Entering the fish market, if we see them, we can not buy a glass of sea urchin eggs. They are something sublime that not everyone knows. And so it was today… we saw the hedgehogs and we did not resist, we took them right away. Here it is not difficult to find them so much so that the fishmongerss provide to open them and to prepare the glasses directly instead of having them cleaned to the customer. There is no more immersive feeling of the scent and taste of the sea that pasta with sea urchins can give. You feel like you have the sea in your mouth! The sea urchins are a product of a unique freshness that retains all the aroma of the water where it was caught. The dish that I propose is a classic of the cuisine of Palermo, you can find it in any place, it is must of this kitchen and if you taste it you will understand immediately why… Few ingredients, very few steps, little time to prepare it, an excellent glass of accompanying wine and you will be in a moment on the seashore kissed by the sun.


Ingredients for 4 people:

450 grams of spaghetti
2 cloves of red garlic
1 small Chili Fresh
1 bunch of fresh parsley
1 glass of dry white wine
1 glass of fresh curly eggs
3 tablespoons of extra virgin olive oil
Salt and pepper to taste

Procedure:
 
Let's start by preparing the base for the sauté. We spell the garlic, Tagliamolo in two and priviamolo of the soul then Tagliamolo in small cubes and put in the pan. After having deprived of the seeds, we cut to rondelline small the chili and we also put this in the pan. We grind 1/4 of parsley and combine it with chili and garlic, add oil and light on medium heat. Let's Cook 5 ' about so we raise the flame and smudge with wine. Let's go another 3-4 ' about so we turn off. In the meantime we cook the STA in abundant salt water respecting the cooking times indicated in the package. Add two tablespoons of curly eggs to the sauce and Amalgamiamo well. Add a pinch of salt and one of pepper. We drain the pasta al dente and put it in the frying pan, add another 1/4 of chopped parsley and let it jump and mix well. Ready Pasta, now let's prepare to serve.
 
Tips for mise en place:

Helping us with a kitchen pliers and a ladle, rolled the pasta and stick it in the center of the dish, put on top a tablespoon of curly eggs, a ground of fresh black pepper and still chopped parsley. We can bring the dishes to the table.

We serve well warm and good appetite!!!!!
