Nest of hairs with crispy zucchini

Do you remember the bucatini with Neapolitan zucchini? Well, it's advanced a little Neapolitan zucchini… We also join the Genoese and in addition to unite Italy, we will get a delicate but tasty first. In short, a taste that you do not expect but that will captivate you!

Ingredients for 4 people:

450 grams of hair
1/2 Neapolitan zucchini
2 Genoese zucchini
1 tablespoon of capers
3 anchovies
100 grams of date
100 grams of Parmigiano Reggiano
1/2 Onion
Salt, pepper and extra virgin olive oil to taste

Procedure:
 
In a frying pan fry the onion previously cut into cubes. Let's put it on low flame and let it wither. In the meantime we prepare the zucchini. Tagliamole in thick slices and dividiamole in four, cut the tomatoes in half, rinse the capers and continue with the preparation of our condiment. As soon as the onion is ready, we can put the tomatoes and zucchini in the pan. We won't have to cook them too much because they have to stay crisp. Let's say that about 6-7 ' is enough. At half cooking we add the capers and the anchovies, we skip everything in order to amalgamate the condiment. You will see that the anchovies will melt and there will be no trace. We fix salt and, while finishing the cooking seasoning, we cook the pasta respecting the cooking times that for this format are really tight. Scoliamola and Versiamola in the frying pan. We jump and Amalgamiamo, combine half the cheese and continue to blow the dough. We flatten it just before the dough is sticking.
 
Tips for mise en place:

Rolled the pasta by helping with a ladle and using it in the center of the dish. Allarghiamola to the center in order to form a nest. We take a generous spoonful of condiment and Posizioniamolo in the center of the nest, let's put a little ' around the pasta. Sprinkle with parmesan, a little pepper and a drizzle of raw oil.
