Spaghetti fava beans and stracciatella of Buffalo Bell

Simple, fast and tasty is the scope that we are to prepare today. A dish of pasta with Mediterranean taste that, I assure you, will please the fave even to those who distort the nose to the thought of having to taste them (see me for example). Try it and if so leave a comment!!!!

Ingredients for 4 people:

 

450 grams of spaghetti
1 Kg of fresh beans
1 shallot
1 medium sized potato
250 grams of Buffalo Stracciatella Bell
1 teaspoon of sweet paprika
A few strands of chives
Salt, pepper and extra virgin olive oil to taste

 

Procedure:
 
First we have to shell the beans. It is an easy operation but a little tedious, it will take a few minutes then it is better to make it in advance. We clean and suffer to rondelline our shallots and put it in a saucepan with oil and let it wither in low flame. Just ready, let's add the beans and fry them 5 ' so we put a pinch of salt, paprika and cover flush with water. We leave to cook about 15 ' and anyway until they are ready. So remember to taste before you finish cooking. In the meantime let's boil the potato. We can put the dough in the cooking respecting, as usual, the times indicated in the package. After cooking the beans, fix salt, put half aside and leave the rest in the pot. Add the potato and with an immersion blender we reduce the whole cream. If necessary, add some pasta cooking water. We have to get a cream that is slightly dense and velvety. We drain the pasta al dente and put it in the pot, add the cream of fava beans, the whole beans and mix everything to amalgamate the ingredients. Let's get ready for serve now.
 
Tips for mise en place:
 
Put in the center of the dish a portion of dough rolled up on itself, if necessary add a few beans and then put on a generous spoonful of stracciatella. We finish the dish with a little chopped chives and a few drops of oil.
