Spaghetti garlic and oil on cauliflower velvet

We all know that the spaghetti garlic, oil and chilli, are a tasty dish, quick and affordable for everyone. At one time they were the must plate of midnight spaghetti but by now, these habits have been lost. Well, if we all agree with these statements, we see how, with small additions, we can slightly twist this dish and add body and taste without neglecting the basic preparation of which we are all masters. A cauliflower and a crumb will suffice to create this alchemy. Let's see what we need to proceed in the making of this dish.

400 grams of spaghetti
1 small white cauliflower
1 clove of garlic
5 Salted anchovies
1 medium-sized chili
6-7 tablespoons of smoothed bread crumb
1 bunch of fresh parsley
1/2 Glass of milk
Salt and oil E.V.O. Taste

Put two tablespoons of oil and the anchovies in a frying pan and let them go to sweet flame. As soon as a creamy is formed, add the crumb and let it toast to a slightly higher flame.

 

 

As soon as the crumb has become crisp, let's put it aside. We bring to boil abundant salted water and dive into the cauliflower cut into small pieces and almost the same size so that they cook all in a uniform manner. Let's Cook 15 ' then Scoliamolo, keeping the cooking water aside, and trasferiamolo in the pan on which we have prepared the crumb.

Add a tablespoon of oil and let it jump for 1 ' then add the milk and let it cook until the cauliflower has absorbed much of the liquid. We transfer everything to the mixer and mix by adding two tablespoons of oil and a couple of cookware of cooking water. If the mixture is too compact, add more water.

Having reached the consistency of a mayonnaise, we put aside the cream. In a frying pan, put two tablespoons of oil, a clove of garlic and a chilli pepper and fry. Meanwhile, we bake spaghetti in the remaining cauliflower cooking water.

As soon as the dough is well al dente, Trasferiamola in the pan and fry it 1 ' then add two ladles of water and continue, if necessary, until the cooking is complete. We add abundant parsley and the crumbs kept aside. We can serve.

Put three tablespoons of cream of cauliflower in the center of the dish, we beat on the bottom so as to make it spread evenly then, with the help of a kitchen pliers and a ladle, rolled the spaghetti and place them in the center of the cream. We complete with a sprinkling of breadcrumbs.
