Striped Spaghetti with red mullet and fennel

We continue with the preparation of dishes of our tradition. In this case, a typical Sicilian dish that knows how to combine ingredients from the sea and the Earth. A classic rich in taste, thanks to the rock and perfume mullet, thanks to the wild mountain fennel. The base of this first is the springboard for other typical first ones such as, for example, pasta with the Sardinians of Palermo if you foresee some addition and eventual finish in the oven. We learn, therefore, to prepare this dish and then to launch ourselves in other preparations rich in taste that Trinacria can give us.

450 grams of spaghetti striped
300 grams of red mullet fillets
250 grams of wild fennel
100 grams of cherry tomatoes
1 clove of garlic
1/2 glass of dry white wine
Salt, pepper, chilli and E.V.O. oil Q. b

We wash the Finocchietti and put them in a pot full of water. Let them cook, from the boil, for 15-20 '. In the meantime we put the garlic crushed in a sauté together with a tablespoon of oil and fry it with sweet flame. As soon as it has taken color, togliamolo and brown the mullet fillets taking care to leave half full and half cut in chunks.

 

 

We raise the flame and smudge with wine. As soon as the alcohol is evaporated, add the tomatoes cut in half and let it cook for 2 '. Meanwhile, we drain the finocchietti, keeping the cooking water aside, and coarsely chop it then aggiungiamoli the rest of the ingredients and amalgamiamo the whole, leaving it to flavor, for another 3 ' adjusting salt, pepper and chilli. Put the cooking water of the finocchietti into the pan and cuociamoci the pasta for the times indicated in the package.

 

 

We drain the spaghetti al dente then add them to the seasoning and we cook adding, if necessary, some cooking water. Serve.

Rolled the pasta with the help of a kitchen tongs and in the middle of the dish. Pour on a little ' of seasoning and complete the dish with a couple of fillets placed on top of the dough and a few sprigs of fresh fennel.
